Chef Alessandro Stratta was brought to Vegas by way of the French Riviera (and the Mirage) to head Alex in Steve Wynn’s Wynn Las Vegas. And while the restaurant delivers the requisite flash expected in a Vegas dining establishment (the grand staircase, copied from the movie “Hello Dolly,” ensures a dramatic entrance, but unsteady women in high heels should beware), the food still manages to steal much of the limelight. Do order the fantastic braised short ribs and the lobster quenelles. The wine list is heavily skewed toward France, and if you still don’t think you’re spending enough money, the menu devotes a half a page to caviar. And unlike most big chef restaurants in Vegas, Alex is actually in the kitchen. Book the special chef’s table and see for yourself. Note: Children under 5 are not permitted.
