Chef Paul Bartolotta is another one of Steve Wynn’s culinary crown jewels with his own gorgeous namesake restaurant at Wynn Las Vegas. As the name suggests, the menu is focused primarily on seafood, nearly all of which is flown in fresh from the Mediterranean. Chef Bartolotta’s watchword is purity; no smothering sauces or fussy preparations, most fish is filleted tableside. (The restaurant serves an average of 80 whole fish per night.) For extra romance, book a table downstairs with a view of the lake; weather permitting, you can enjoy your meal at a cabana table next to the water. For a great surf and turf experience, order the truffle-scented beef tartare as an appetizer. This being Vegas, the menu isn’t all about fish or subtlety: There is an 18 oz. prime beef rib eye in red wine sauce, and in keeping with the town’s new adult theme, no children under 5 are permitted.
