Consistently listed as one of the very best restaurants in Hawaii, one can’t help but be a little disappointed that it’s located on the third floor of a downtown office building, and not, say, on a beach. But if you’re interested in the very best and most creative examples of Hawaiian regional cuisine, there is no other choice. Startoff with the “Opihi shooter” appetizer: Limpet in spicy tomato water with fennel, basil, ume, and shiso essences. Finish with a selection from the extensive Hawaiian coffee menu, which reads like a wine list, listing year and local provenance.
