L'Hotel de Ville
The chef at L’Hotel de Ville, Philippe Rochat, was mentored by the legendary chef Fredy Giradet and spent 16 years under Giradet’s tutelage before taking over the restaurant in 1996. Still, Giradet’s legacy is apparent in the food served at L’Hotel de Ville, in such well-crafted dishes as Bresse chicken in cocotte, a dish delivered to the table in a gleaming copper cauldron, the broth fragrant with black truffles. The restaurant and hotel are located in Lausanne, Switzerland, an alpine city that affords glorious views of the Alps and mountain lakes, with plenty of fresh air to help pique the appetite.
