The Netherlands - World's 100 Best RestaurantsSergio Herman is one of only three Dutch chefs to earn three Michelin stars, and the food at Oud Sluis is as beautiful as it is delicious and whimsical. In one dish, granny smith apple gelatin encases a small ball of tart apple sorbet; in another, small balls of foie gras are flash frozen and presented in a small cone—each boulette melts on the tongue. A trio of lobster preparations looks like a plate of chocolates, and the “tagliatelle” that accompanies the langoustine is really noodles made from langostine essence and gelatin. At Oud Sluis, things aren’t always what they seem.
