At this Hanoi restaurant the plain dining room (think plastic chairs and tables and virtually no décor) is matched by the simple menu—only one dish is served, a fried fish prepared table side and accompanied by rice noodles, cilantro, chili peppers, and chopped peanuts. The restaurant, which has been in the same family for five generations, makes this dish as perfect as it could possibly be. Why mess with success?
